Black Bean & Sausage Posole, which I made for the gals who attended my World Card-Making Day event on Saturday and everyone loved it.
Black Bean and Sausage Posole
12 oz Jimmy Dean sausage
(2) 14.5 oz cans low salt chicken broth
15 oz can black beans- rinsed & drained
14.5 oz can golden hominy
(1.5) 14.5 oz cans Mexican style tomatoes
1 cup loose-pack hash brown potatoes
1/2cup chopped green pepper (1/2 pepper)
1/3 cup chopped onion (1/2 onion)
1 clove minced garlic
1 tsp oregano
1/2 tsp chili powder
In a large saucepan, brown the sausage - drain fat.
Add to the crock pot along with remaining ingredients. Cook on low for 8 hours or high for 4
love to eat with Jif Corn Bread (2 boxes) jazzed up with a can of cream style corn, shredded cheese & small can of green chilies (I only added 1/3 cup milk & 2 eggs to the mix) and it was AWESOME!
